The nutrition of oatmeal, plus the sassy
spice of ginger, gives this recipe an energizing, health-revitalizing,
delicious punch!
2 eggs
3/4 cup sugar
1/4 tsp. ground ginger
1/2 tsp. vanilla
1/4 tsp. salt
1 Tbsp. butter, melted
2 tsp. baking powder
1 3/4 cup quick cooking oats
Preheat oven to 350F then cover a large cookie
sheet with ungreased foil. In a large bowl, beat eggs until
frothy. Add sugar, ginger, vanilla and salt. Mix until sugar
is dissolved, about 2 minutes. Blend in butter and baking
powder, then fold in the oats. Drop the batter onto cookie
sheet in rounded teaspoonfuls spaced 2" apart. Bake
10 to 12 minutes or until the edges are golden brown. Gently
lift from the cookie sheet while hot and cool on a rack.
Makes 24 cookies.
